Low Crab Gruten free Pancakes
Excess carbohydrates is one of the leading causes of weight gain. Wheat and other glutenous grains are one of the leading causes of food allergies which lead to numerous psycho physiological bummer symptoms in many people. This recipe is an attempt to provide an indulgence that circumvents the bummer side effects.
List of ingredients. Adjust to your liking.
- 1/2 C Flax seed meal
- 1/2 C Buckwheat flower (or other non glutenous flower)
- 1/2 C Bean flower (black bean, garbanzo or other)
- 1 T baking powder
- Pinch salt
- 1 1/2 C Milk (Bovine, soy, hemp, almond, coconut, or other)
- 4 eggs
- 1T olive oil
- 1/2 t Vanilla
- Optional: nuts, banana, or other fruit.
I prefer to mix the dry ingredients in a separate bowl and then add to the wet ingredients after whisking them, but it should work just fine all in one bowl. Cook on a 400 degree griddle as any pancakes. These cakes will not brown as much as the ones with higher carbs and sugars in the batter.
Notes:
The number of eggs can be changed without changing the proportion of other ingredients. In fact I have replaced all the eggs with a banana blended with the wet ingredients.
Flax seed meal
Flax meal has a short shelf life and is best refrigerated, or buy whole flax seed and grind as needed in coffee grinder, blender, or Magic Bullet. Flax will soak up a lot of liquid, so if mix is too thick add more milk.Topping
A dear friend once said that pancakes are just an excuse to eat syrup (not low carb). I prefer to top mine with apple sauce or ever better this concoction:
Core an apple or pear and put in blender or Magic Bullet with generous sprinkle of cinnamon and just enough maple syrup for it to blend. Not low carb, but better than syrup.
